Willow first. Then persimmon. Then the rest of spring.

Honey is a map of bloom. On the Llano uplift it starts at the water.

The Llano uplift is old granite under thin soil, creeks that run and then go quiet, and a spring that arrives all at once. Fine Llano Honey is kept in that country, not a generic “Texas wildflower” blend, and not a story we wrote after the fact.

Riverine willow (Salix) is one of the first serious nectar flows here. It likes wet feet: creek banks, the Llano River watershed, the low ground that greens before the ridges do. The bees hit it hard in early spring. That is why this jar is named Hill Country Spring Willow, and why we had the crop read in a lab instead of guessing from the calendar.

Persimmon, Texas and American, Diospyros, comes in as a substantial second. You can taste that as a woody, slightly tannic undertone behind the green, herbaceous willow. Mesquite, elm, and a little rose-family pollen show up in the count. Oak, ash, grape, and goosefoot are traces. Some grains were too degraded to name. That is a real forage, not a clean textbook.

Why the lab

A jar should be able to say where it came from

Mellissopalynology, pollen analysis of honey, is how you check a crop against the landscape. A honey may be called unifloral, or monofloral, when a single pollen type dominates. The usual line is around 45%. This sample sits well above it.

The watershed

Early spring on the Llano

Willow is a water plant in this country. The photograph is the argument: wet ground, a flush of bloom, live oak on the edge. That is the forage window we harvested into in April 2026.

We are not going to dress willow bark up as medicine. This is food from a place. Light-colored, green and woody, a little tangy when it is young. Pair it like a white wine from a cool year. Goat cheese, yogurt, tea, a plain cake. Let it sit if you want the edges rounder.
